Preheat your oven to 425F
Remove your veggies and cut them as shown below.
Toss your diced poatatoes in a splash of oil + 1/2 of your seasoning and trasfer to a lined baking sheet and place in the oven for ~ 20 minutes or until finished.
Bring a large pan + a splash of oil up tp medium high heat. Once hot add in your Oyster Mushroom and let cook, stirring regularily, for ~ 7 minutes or iuntil it has started to brown and crisp up. Remove mushroom from pan and set aside. in the same pan add another small splash of oil + your diced onion + green pepper and the other half of your seasoning ramekin and let cook for 7 minutes. Next add in your philly mayo and mix throughly and let cook for another 2 minutes.
This is a fun step :) .Turn the heat down to low. In a pan move your veggie mix into 2 seperate piles. place your cheese on top of each pile and your buns open on top. This helps to soften the bread and melt the cheese. Let cook like this for ~ 1- 2 minutes and then pick up your bun and use a spatchula to fill everything into your bun.
Build your plate. Roasted potatoes on the side and sandwich on the plate & enjoy!
