Preheat your oven to 400F
Remove your vegetables and chop as shown below.
Toss your potatoes in 1/2 of your seasoning + a splash of oil and transfer to a lined baking sheet. Roast in the oven for approximately 20 minutes or until easily pierced with a fork.
While the potatoes are roasting, bring a large pan + a splash of oil to a high heat. Add in your oyster mushrooms and cook for approximately 8 minutes, flipping regularly until they start to brown and crisp. Remove and set aside on towel.
In the same pan, add in chopped onion + pepper and let cook for 5 minutes. Add in the other half of your seasoning + 1/2 cup of water and cook for another 5 minutes or until the sauce begins to thicken. Lastly, add in your mustard mayo and cook for an additional 5 minutes.
Bring the temperature down to a medium heat and divide your vegetables into two separate piles in the pan. Place your cheese on top, followed by your sliced bun and let cook for approximately 4 minutes. When finished, use a spatula to lift everything up in one swoop. Top with your crispy mushrooms.
Time to plate! Add your sandwich + potatoes on the side & ENJOY!
