      Peanut Tofu Soba

      STEP 1

      Bring  a medium pot of water + a pinch of salt up to a boil. Once boiling, add in your soba noodles and cook for ~5 mins, until tender. Once  done, run your noodles under cold water to stop the cooking process, then set aside. (this is to stop them from going too mushy) :)

      RICE NOODLES: Bring a large kettle / pot of water up to a boil. Once boiling, cover your noodles and let them sit for ~8 mins. You will know theyā€™re done when there is no ā€˜crunchā€™ when tasting. STRAIN AND RUN UNDER COLD WATER and set aside. Add into the recipe wherever soba noodles are listed :)

      STEP 2

      Remove your veggies from the bag and cut as shown below. 

      STEP 3

      Bring a large saucepan + splash of oil up to medium-high heat. Once hot, add in your tofu + marinade and cook for ~ 5 mins, until starting to brown. Next, add in your red pepper and carrot, and cook for another ~5 mins. Then add in your noodles + cabbage + sauce + 1/3 cup of water and mix thoroughly and let cook for another 3-4 minutes until the sauce is clinging to the noodles and vegetables.

      STEP 4

      Plate your noodles and veggies, then garnish with your cilantro & sesame seeds & ENJOY!! šŸ˜šŸ˜
