      Peanut Tahini Quinoa Bowl

      STEP 1

      Preheat your 400F.Bring 1.5 cups of water and your rice + a pinch of salt up to a boil. Once boiling, turn down to a simmer, cover and let cook for ~12 minutes. 

      STEP 2

      Remove your veggies from your bag and cut as shown below. Lightly coat your broccoli in oil + a pinch of salt & pepper, then roast in the oven ~ 10 minutes or until browning slightly.

      STEP 3

      Bring a sauce pan + 1 tbsp of oil up to medium-high heat. Once hot, add the tofu and marinade. Let cook for 8-10 minutes, stirring constantly until the sauce has thickened and the tofu has started to brown. 

      STEP 4

      Build your bowl. Rice on the bottom, then your cucumber + edamame, next roasted broccoli then top with your cilantro and radish + peanut tahini drizzle! ENJOY!! šŸŒæšŸ¦„
