Bring a medium-large pot of water + a pinch of salt up to a boil.
Once boiling, add in your pasta and let cook for ~ 14 mins. Taste to make sure there is no / only slight crunch to pasta.
Strain and set aside.
Remove your veggies and cut as shown below.
Bring a large pan with a splash of oil up to medium-high heat. Add diced shallot and cook for 2 mins, until they start to brown. Then, add in your mushrooms and cook for another 5 mins.
Next, add in your stroganoff sauce, and cook until the sauce has thicken up, stirring constantly.
Plate your pasta, and garnish your diced parsley + a splash of olive oil & salt + pepper. Enjoy! 🌿😜
