      STEP 1

      Preheat your oven to 375F
      Bring 1 cup of water + your 1/2 cup quinoa and a pinch of salt up to a boil. Once boiling turn down to a simmer, cover, and let sit for approx 10 minutes.

      STEP 2

      Dice your veggies as shown below

      Toss your veggies in a splash of oil. Transfer to a lined baking sheet along with your marinated chickpeas and place in the oven to cook for 18 min total.

       Remove your kale after ~10 minutes where you just start to see some browning on the edges, set aside. 

      STEP 3

      In a small sauce pan bring a small splash of oil up to medium high heat. Once hot add in your gravy and cook until it is warmed ~ 5 minutes.

      STEP 4

      Build your bowl. Quinoa on the bottom then add all your veggies + chickpeas, drizzle over your warmed gravy and garnish with your parsley. A nice heavy sprinkle of black pepper really goes well with this dish & ENJOY!
