Creamy Miso Soba Noodles
STEP 1
Bring a large pot of salted water up to a boil. Once boiling add in your soba noodles and cook for ~ 7 minutes. Once done drain off the water and run under cold water to stop the cooking process.
***Keep 1/3 cup of pasta water off to the side.***
GF: For the rice noodles bring a large pot / kettle of water (enough to cover your rice noodles) up to a boil. Once boiling cover your rice noodles and let sit for ~ 7 minutes, when trying a bite there should be no crunch. Once done, strain, and run under cold water until cold to the touch.
replace for soba in rest of recipe.
STEP 2
Remove your veggies from the bag and cut as shown below.
STEP 3
Bring a large pan with a splash of oil up to medium high heat. Once hot add in your shallot, cabbage + edamame let cook for 5 minutes. Next add in your miso sauce + in your pasta water ( if you forgot use just 1/2 cup regular water) stir and let for 1 - 2 minutes. Toss in your soba and toss , keep cooking until the sauce thickens enough so it is sticking to the noodles .
STEP 4
Transfer to a bowl. Top with your cilantro, green onion + sesame seeds & Enjoy!!
