      Lemon Garlic Pasta

      STEP 1

      Preheat your oven to 375F

      Bring a large pot of water up to a boil. Once boiling add in your pasta and let cook for ~ 11 minutes. Once done strain & set aside. 

      STEP 2

      Remove your veggies and cut as shown below.

      STEP 3

      Toss you cauliflower in a splash of oil + salt and pepper. Transfer to a baking sheet and bake for 15 minutes.

      STEP 4

      Bring a large sauce pan up to medium high heat and add in your lemon + oil pasta sauce, let heat up for ~ 3 minutes. Add in your diced onion and cook for another 5 minutes. Next add in your tomatoes & chickpeas and let cook for 7 minutes here. Once that’s done add your roasted cauliflower and your cooked pasta to the pan and mix thoroughly, approx. 3 minutes.

      STEP 5

      Transfer to a bowl & garnish with a splash of olive oil, salt & pepper, your hemp parmesan and your parsley garnish. Enjoy!
