Bring a large pot of salted water up to a boil.
Once your water is boiling add in your pasta and let cook for ~ 10 minutes. When you taste it, there should be no or very slight crunch (al dente) ***Before straining set aside 1/3 cup of pasta water***
Strain and set aside.
Remove your veggies and cut as shown below.
Bring a large pan + a splash of oil up to medium high heat. Once hot add in your shallot and let cook for 5 minutes. Next add in your ricotta + your cherry tomato and let cook for 7 minutes. Next step is to add in your pasta and your pasta water ** if you forgot add 1/4 cup regular water, mix quickly. Add in your spinach and let cook until spinach is wilted and the sauce is clinging to your pasta ~ 5-6 minutes.
Build your bowl. Add your pasta and garnish with a drizzle of olive oil and a pinch of salt and pepper to taste! ENJOY!
