Bring 1 cup of water + a ½ cup of rice + a pinch of salt up to a boil. Once boiling, cover, turn down to simmer and let sit for ~ 11 minutes.
Remove your veggies and cut as shown below.
Bring a large pan with a splash of oil up to medium-high heat. Add in the diced shallot and cook for 2 mins, until they start to brown. Then, add in your tomato and cook for another 3 mins. Next, add in your curry mix + 1 cup of water & your kale and cook for 4 minutes as it softens. Add in your last ingredient, your white beans, and let cook for two minutes. Your soup should be not too thick or not to thin. If too this cook longer so it reduces if too thick just add in a splash or two of water.
Build your bowl. Rice on the bottom with some soup over top and some parsley for garnish. A small pinch of salt and pepper over top! Be careful it isn’t too hot & enjoy!!
