      STEP 1

      Remove your veggies from the bag and cut as shown below. 

      STEP 3

      Bring a large sauce pan + a splash of olive oil up to medium high heat. Once hot add in your onion & red pepper and let cook for ~ 5 minutes until browning on the edges.

      Next step is to add in your rice + tomato mix + chickpeas & kidney beans + 1 cup water. Let the water come back up to a bubble an then turn the temperature down to low. Let cook to 15 minutes total or until the rice is no longer ' crunchy' and all the moisture has been absorbed. ** you  can alwasy add a splash more water or cook a little longer / hotter at the end to get rid of any extra liquid.

      STEP 4

      Build your bowl. Rice mix on the bottom and green onion + cilantro on top  & ENJOY!! šŸ˜šŸ˜
