      Irish Smokey Mash

      STEP 1

      Bring a large salted pot of water + your potatoes up to a boil (yes put you potatoes in as the water heats up. Once boiling set a timer for 12 minutes. You will know when they are done when you stab them with a knife and they fall off on their own.

      Preheat your oven to 350F.

      STEP 2

      Remove your veggies and cut as shown below. Parsley is missing but just give it a good dice and save for garnish at the end.

      STEP 3

      Transfer your chickpeas to a baking sheet, parchment paper suggested, & place in the oven to cook for 15 min.

      STEP 4

      Bring a large sauce pan + a splash of oil up to medium high heat. Once hot add in your shallots and cook for 3 minutes. Next add in your cabbage, cook for another 3 minutes. Then add your kale and stir quickly for just two minutes, set aside and use the same pan for your mushrooms.

      STEP 5

      Add another small splash of oil + your mushrooms to the pan and let cook 2 minutes. Add in your marinade and let cook for ~5 minutes stirring regularly until most of it is absorbed/ thickened up.

      STEP 6

      Strain you potatoes. Mix you shallot + cabbage + kale + your potatoes + mashed potato mix. And stir until fully incorporated.

      STEP 7

      Build you plate. Potatoes on the bottom, then chick peas topped with your mushrooms and parsley garnish. ENJOY!
