Herby Healthy Chickpea Bowl
Pre heat your oven to 375 F
Bring your quinoa + 1 cup of water up to a boil. Once boiling, bring the temperature down to a simmer, cover, and let sit for ~ 12 minutes.
Remove your vegetables and cut as shown below.
Toss your zucchini and your kale in some oil + salt and pepper (massage the kale to get all those hard to get places, it will make a huge difference). Transfer to a baking sheet with your chickpeas and bake for 20 min, REMOVE YOUR KALE after 10 minutes.
Once your quinoa is done, transfer to a serving bowl. Top with your chickpeas, kale, zucchini, diced tomato & garlic drizzle. Be sure to garnish with your parsley & an extra sprinkle of salt & pepper. ENJOY!
