      Greek Bowl

      To save a container we added the lemon juice into the dressing recipe. :)

      STEP 1

      Bring your quinoa + 1 cup of water up to a boil. Once boiling, bring the temperature down to a simmer, cover, and let sit for ~ 12 minutes.

      ** The chickpeas are meant to be raw but if you want to roast them just preheat your oven 350F. Strain & then toss them in a splash of oil + sa;t & pepper. Transfer to a lined baking sheet and let cook in the oven for ~ 16 minutes. ***

      STEP 2

      Remove your vegetables and cut as shown below

      STEP 3

      Once your quinoa is done, transfer to a serving bowl. Add in your spinach + chickpeas + tomato + cucumber + parsley. Then crumble your tofu feta & drizzle with your balsamic vinaigrette & ENJOY!
