      Pineapple & Cashew Fried Rice


      STEP 1

      Bring 1.5 cup of water + your 3/4 cup rice and a pinch of salt up to a boil. Once boiling turn down to a simmer, cover, and let sit for approx

      11 minutes.

      STEP 2

      Remove your veggies and cut as shown below.

      STEP 3

      Bring a sauce pan + 1 tbsp of oil up to medium high heat. Once hot add in your diced mushrooms + onion and let cook for ~5 minutes just until they start to sweat and slightly brown. Next add in your peas + carrot & your pineapple and cook for another 3 minutes.

      Once your rice is done add in your rice along with your sauce + cashews + 1/2 of your green onion and let cook for ~ 7 minutes. ** if your rice isn’t done when you think your veggies are ready just remove it from the heat and leave it off to the side.

      STEP 4

      Build your bowl. Rice mix on the bottom & the rest of your green onion on top & ENJOY!! πŸŒΏπŸ¦„
