Spicy Cous Cous + Feta
Bring a large sauce pan + 1 tbsp oil up to medium high heat. While your pan is still heating up add in your cous cous and keep stirring until the cous cous starts to brown ~ 5 minutes. Next add in your broth + 1/2 cup water keep stirring regularly as the cous cous soaks but the broth and starts to expand ~ 12 minutes. You will be adding the rest of your veggies in shortly.
Remove your vegetables and cut as shown below.
After ~ 5 minutes of adding in your broth to your cous cous add in your other vegetables. Incorporate them into the cous cous and keep cooking until both the spinach and mushrooms begin to soften ~ 10 minutes. Your dish will be done when all the liquid is absorbed by the cous cous.
Build your plate. Cous cous mix on the bottom and then topped with your feta + sunflower seeds + raisins, a splash of olive oil & a spinkle of salt and pepper! ENJOY!
