Chickpea Shawarma Bowl
Please confirm your quinoa is 1/2 cup and not 3/4 cup. If you did receive 3/4 cup please just omit 1/4 cup and follow recipe as shown below.

Preheat your oven to 400F
Bring 1 cup of water and your quinoa + a pinch of salt up to a boil. Once boiling cover, turn down to simmer, and let sit for ~ 11 minutes
Remove your veggies and cut as shown below.
Transfer your marinated chickpeas to a baking sheet to a baking sheet. Bake for 18 - 20 minutes.
Build your bowl. Quinoa on the bottom and topped with your spinach +diced shallot + tomato + chickpeas and a dollop of your garlic sauce!! Don’t forget a little sprinkle of salt & pepper on your tomatoes, YUM! Enjoy!!!
