Bring your rice up to a boil + 1.5 cups of water and pinch of salt. Once boiling, turn down to a simmer, cover, and let sit for ~12 mins.
Remove your veggies cut as shown below.
Bring a large pan + a splash of oil up to medium-high heat. Once hot, add in your shallots and let cook for ~ 3 mins until they start to brown. Next, add in your chickpeas, stirring regularly, and let cook for 3 mins. Add your sauce and let everything cook for ~ 8 minutes as the sauce thickens up. Add if your spinach with around 2 minutes left and stir regularly until it has wilted down. If ever you think it is too thick add in some water or not thick enough just let it cook a little longer.
Time to build your bowl. Rice on the bottom, everything else on top! Garnish with your coconut drizzle & cilantro + a sprinkle of salt and pepper. Enjoy! 🌿😜
