Buffalo Cauliflower Tacos
Pre heat your oven to 400F
Remove yoru veggies and cut as shown below.
Toss your cauliflower in half of your buffalo sauce and transfer to a baking sheet. Bake in the oven for ~ 18 minutes.
While your cauliflower is cooking bring a dry pan (no oil) up to medium high heat. Once hot add in a tortilla and let sit for ~ 20 seconds and flip just to warm/ toast/ soften your tortilla. Be careful not to let it burn as the pan gets hotter the first and last may have different cook time. As they your tortillas are done transfer them to a plate with a towel so they do not dry out, very important!
Build your taco. Buffalo cauliflower on the bottom, coleslaw on top and garnish with the rest of your buffalo sauce, a squeeze of lime + a sprinkle of cilantro.

coleslaw: white cabbage, carrot, black beans, vegan mayo, mustard, apple cider vinegar, salt & pepper
