Preheat your oven to 375F
Bring 1.5 cups of water + a pinch of salt and your rice up to a boil. Once boiling cover, turn down to a simmer and let cook for ~ 11 minutes.
Remove veggies and cut your roma + yellow pepper and onion into small 1 cm pieces. Dice your green onion and cut your cauliflower into smaller florets.
Toss your cauliflower in a splash of oil & 1/3 of your seasoning , transfer to a baking sheet and bake for ~15 minutes.
Bring a large sauce pan + a splash of oil up to medium high heat. Once hot add in your onion + pepper & roma tomato. Let cook for ~ 7 minutes. Once your rice is ready add in your rice + the rest of your seasoning + 1/2 of your green onion. Cook for ~2 more minutes until all your rice is coloured and everything is well mixed.
Build your bowl. Rice mix on the bottom then top with your cauliflower + tahini drizzle + the rest of your green onion. Enjoy!!
