      Broccolini & Mushroom Soba

      STEP 1

      Bring a medium sized pot + a pinch of salted water up to a boil. Once boiling add in your soba and cook for ~ 5-6 minutes. Once done strain our noodles from the water and run under cold water to halt the cooking process. Set aside. Sub for soba in rest of recipe

       GF Option: Bring a large pot/ kettle up to a boil. Once boiling cover your rice noodles and let soak for ~ 8 minutes or until there is no ‘crunch’ when trying a piece. Strain off the hot water and run your noodles under cold water to stop the cooking process. Set aside.

      STEP 2

      Cut your veggies as shown below.

      Bring a large pan + a splash of oil up to medium high heat. Once your pan is hot add in your shallot and your mushroom and let cook for 5 minutes. Next add in your broccolini pieces and cook for another 8 minutes. Everything should be browning around the edges, when you are ready add in your soba + your sauce and keep mixing so your noodles are fully coated, and your sauce has thickened and clung to the noodles.

      STEP 4

      Build your bowl. Your soba noodles + the broccolini, mushroom & shallot goes on the bottom and garnish with your green onion & sesame seeds! ENJOY! 😊🌸🌿
