      Balsamic Pasta

       
      STEP 1

       Bring a medium- large pot of water + a pinch of salt up to a boil. Once boiling add in your pasta and let cook for approx. 9 minutes. Strain and set aside

      *** before straining keep 1/4 cup of pasta water off to the side

      STEP 2

      Remove your veggies and cut as shown below. 

      STEP 3

      Bring a large pan with a splash of oil up to medium high heat. Add in your shallot and cook for 5 minutes. Then add in your tomatoes and cook for another ~ 3 minutes. Add in your zucchini and cook for another 5 minutes or until the edges brown just a little. Lastly add in your sauce, pasta and your pasta water and let cook until the sauce thickens ~ 5 minutes 

      STEP 5

      Transfer your pasta to a bowl and don’t forget to garnish with your hemp parmesan and your basil! Enjoy!!
