Preheat your oven to 350F
Bring a large pot of salted water up to a rolling boil.
Remove your veggies and cut as shown below.
Toss your carrots in a splash of oil + salt and pepper & transfer to a baking sheet then cook in oven for ~ 15 minutes.
When your water is boiling add in your potatoes and let them cook for ~ 12 minutes. When they are done transfer back to the pot add in your potato mix and mix / mash throughly until your reach your preferred texture. Set aside.
Bring a separate pan with a splash of oil up to medium high heat. Once hot add in your shepherds pie mix and let cook for ~ 12 minutes stirring regularly.
Before building your plate you can use the same pan, saving a dish, to bring your gravy up to temperature. On medium high heat it should only take ~ 5 minutes.
Build your plate. Shepherds pie mix on the bottom, mashed potatoes on top, carrots on the side + gravy & parsley and an extra sprinkle of salt & pepper on top & enjoy!
