Preheat your oven to 375F.
Remove veggies and cut as shown below.
Toss your diced mushrooms in a splash of oil + 5 spice. On a baking sheet place your marinated tofu + your mushrooms and bake for ~ 12 minutes. Be sure to toss your buns in for the last 2 minutes to toast them just a little.
Build your sandwich. Mushrooms + tofu + carrot & daikon + cucumber + jalapeno + cilantro + spicy mayo. Toss your spinach in a little bit of your pickling liquid as a dressing. ENJOY!
