      STEP 1

      Pre-heat your oven to 400F.

      GF: Bring your rice up to a boil w/ 1 cup of water and a pinch of salt. Once boiling, turn down to a simmer, cover, and let sit for ~12 mins.

      STEP 2

      Remove your veggies and cut as shown below.

      STEP 3

      Toss your mushrooms in a splash of oil and your 5 spice seasoning. Place your marinated tofu and your seasoned mushroom on a baking sheet and bake for 15 minutes.

      Toss your spinach with a splash of your pickled carrot & daikon liquid as a dressing and set aside.

      STEP 4

      Build your sandwich. Mushroom on the bottom, then tofu, then cucumber & pickled carrot + daikon, cilantro, diced jalapeno (if you want it) & top with your spicy mayo. Salad on the side & ENJOY!!
